Ingredients

  • 2 wheat tortillas
  • Cherry tomatoes
  • 1 red bell pepper and 1 yellow bell pepper
  • Crudités (raw vegetables)
  • Radishes
  • 2 apricots
  • 1 red onion
  • 1 avocado
  • Mint leaves

Recipe

  1. Cut the raw vegetables and place them in the center of the tortilla. Add vegan mayo and a few mint leaves.
  2. Cut the tortillas in half and serve as an appetizer or lunch.
  3. (This recipe can be made with any raw or cooked vegetables.)
