Ingredients
- 2 wheat tortillas
- Cherry tomatoes
- 1 red bell pepper and 1 yellow bell pepper
- Crudités (raw vegetables)
- Radishes
- 2 apricots
- 1 red onion
- 1 avocado
- Mint leaves
Recipe
- Cut the raw vegetables and place them in the center of the tortilla. Add vegan mayo and a few mint leaves.
- Cut the tortillas in half and serve as an appetizer or lunch.
- (This recipe can be made with any raw or cooked vegetables.)
